Grapes are harvested from the mountainous vineyards in Ainzón.
The vineyard is in the foothills of the ancient volcano, Moncayo Mountain
The wine is vinified in stainless steel vats and aged on its fine lees for 12 months in concrete vats
Winemaker Michael Cooper searches out high altitude, old vines and dry-farmed vineyards
