A delightfully bitter French apéritif

Created in 1889, Suze is a slightly bitter French apéritif made from gentian root which grows in the French and Swiss mountains
Tricky to grow, it takes at least 10 years for gentian root to reach full maturity
This is made by pressing and distilling gentian root that has been macerating in alcohol for over a year
The result is an earthy, bitter and floral apéritif that also has lemon and herbal notes
Used in many cocktails but is also excellent over ice
