Finca Quara are produced by Familia Felix Lavaque who boast a 140 year history and five generations of winemakers. Based in the Cafayate Valley in Salta, Argentina's highest growing area, their vineyards are located close by in the neighbouring Calchaquà Valley which constitutes one of the highest terroirs in the world, with vineyards perched at altitudes of between 5,200 feet and 6,500 feet in Salta, Argentina, These extreme heights offer perfect growing conditions for expressive fruit development and have all the advantages of very cool climate growing conditions. The high levels of UV light, cool nights and daytime heat give immense fruit set and acidity resulting in very expressive fruit. The grapes are put through a cold maceration at 5 degrees, then fermented at 24 degrees for 10 days. The wine has daily remontages over a three week period and undergoes malolactic fermentation. Here Quara grow Torrontés, Malbec, Tannat, Cabernet Sauvignon, Merlot, Syrah and the Bonarda grape varieties.
