This wine goes through plenty of meticulous vinification processes. The grapes are hand harvested to avoid any damage to them as such avoiding skin/acetic fermentation. Once in the vinification cellar they are kept under strict temperature control to ensure the grapes are at their freshest. Fermentation is stop during the cold-process in order to keep some residual sugar.
