- The vineyards are farmed organically, with all work being done by Matt, the winemaker, and Juan, the only full time worker.
- Fermentation takes place naturally with native yeasts, in a combination of stainless steel and open-top bins.
- 50% of this wine is aged in used oak barrels for 5 months.
