La Despensa País, Colchagua Valley 2022

This old-vine Pais shows juicy, concentrated notes of strawberry and sour cherry.

La Despensa is owned by husband and wife, Matt and Ana, with Matt originally come from Dorset.
The vineyards are farmed organically, with all work being done by Matt, the winemaker, and Juan, the only full time worker.
This wine is dry-farmed which provides the grapes with greta concentration at harvest.
The wine is naturally fermented with native yeasts in open-top bins.
The wine is aged for a short period in Flextank before bottling, which helps retain the purity of the fruit-forward Pais.
