Illimis Cinsault, Darling 2021

Your new world answer to Beaujolais.

From a bushvine vineyard planted in 1972 in Darling and fermented partly with carbonic maceration. It is a stunning example of what Cinsault is capable.
A very attractive nose showing red fruit, roses, a subtle herbal note and white pepper. Light bodied and fresh with soft tannins - entirely charming.
Illimis is brought to us by surfer winemaker/viticulurist Lucinda Heyns, Illimis wines offer a "look through the window" in to the vineyard.
Illimis - meaning clarity in Latin perfectly portrays this.
Still in its early days, Lucinda's day job sees her working as a viticulturist at the Institute of Grape and Wine Sciences.
