A bright and fresh English Pinot Gris.
- Notes on the nose and palate of white stone fruit, pear and flowers, threaded with a touch of spice. Elegant and mineral, with a hint of emerging honey.
- Sufficient weight and texture to match moderately rich dishes including rich white meat, creamier pasta dishes and gratins. Awesome with chicken pie!
- The grapes come from two Essex vineyards: the majority from Martin's Line in the Crouch Valley, the remainder from Bromley Brook vineyard, near Colchester.
- The wine was fermented to dryness in a combination of old Burgundian oak (30%) and concrete egg (70%) over two weeks. After fermentation the wine was put in the egg to age on its lees for 8 months.
- About 33% of the wine has undergone malolactic conversion, for a softer, creamier mouthfeel.
