Cherubino Uovo Chardonnay, Pemberton 2024

Showing notes of stone fruit, lemon and ginger. This Chardonnay is fermented in concrete 'eggs' instead of oak, resulting in a wine with crisp acidity, and a fine chalky texture.

The concrete egg-shaped tanks used to ferment this wine are reminiscent of the old Roman amphorae which keep the lees constantly in contact with the fermenting wine, providing depth, texture and volume.
Minimal interventions, and only the absolute minimum of sulphur added at bottling. The aim is to produce a wine that is pure, vibrant and expressive.
Drinks now but has the potential to age for up to 10 years in the bottle, during which time it will continue to develop a lovely rich complexity.
