Cherubino Pedestal Cabernet Sauvignon, Margaret River 2022
£18.25
Classic Australian Cabernet with dark fruit and silky tannins
- Medium bodied with primary flavours of blackcurrant and bay leaf, layered with secondary cedar and chocolate. Velvety soft tannins and a long finish.
- Fruit was hand-picked and crushed to static, stainless steel fermenters via the sorting table. Fermentation lasted for three weeks with gentle maceration. The time on skins allowed for softening of the tannins.
- Components were aged for 10 months in a combination of new and 1-2 year old French oak barrels prior to blending and bottling.
- A very versatile wine that pairs with anything from roasted red meats to pizza.
- The award-winning and family-owned Western Australian business was established in 2005, by Larry and his wife Edwina, and is now recognised as one of Australia's most successful and innovative wine producers.

October 2024 - Aromas of black fruit with a hint of spice give way to a medium body, blackcurrant and bay leaf with a little chocolate on the palate. A delicious and well-balanced wine from this esteemed producer.
