Single vineyard Dolcetto from northern Italy
- The grapes are hand-picked, destemmed and fermented in concrete. The wine remains on the skins for about 10-15 days, then is aged in stainless steel until the following spring.
- On the nose you find wild berries, with hints of white pepper and sweet spices.
- On the palate, raspberry, plum and blueberry, a hint of white pepper and a lovely almond finish.
- This wine comes from a young vineyard located in Gavi, planted in 2016. The soil is a mix of Cessola's Marl and fluvial clays. This contributes to the soft structure and the lovely mouthfeel.
- Food pairings include Spaghetti and Meatballs, Pasta Bolognese, Veal Marsala, Bruschetta, Lasagna, and Cioppino.
