  • Akashi Sake Brewery has been a family-run brewery in southwest Japan since 1917, and has since expanded to include the Kaikyo Distillery
  • Plum is "ume" in Japanese; this sake Umeshu is made by preserving plums in the finest Ginjo sake for six months and then ageing it for two years in enamel tanks
